Atasu Seafood Marinade and Grilled Fish

A good fish marinade should enhance the natural flavors of the fish with a perfect balance of acidity, sweetness, and aromatic herbs, ensuring a tender and flavorful result, that is exactly what you can expect from this Atasu Fish Marinade.



This marinade isn’t limited to fish, it’s for seafood in general. You can use it on shrimp grill, in a calamari stir-fry and so much more. It is fiery and delicious.
If you dont want it too spicy, you can omit the hot pepper or use less.  I personally like the coarse texture of the marinade but you can also make it smooth by blending the mixture into a fine puree. 

Ingredients
Marinade

  •     1 small onion
  •     1 green bell pepper
  •     1 cup cilantro
  •     1 cup green onion
  •     2-3 hot peppers
  •     Juice of 1 lemon or 2 tbspns vinegar
  •     Salt – to taste
  •     6 tbspns Atasu
  •     Bouillon powder – to taste

The Fish

  •     2 whole tilapia or croaker ~1.2kg

Directions
Marinade:

  •  Slice the onions and peppers.
  •  In a food processor, combine peppers, onions, cilantro and green onion. Add in lemon juice. Process to a coarse consistency.  Stir in Atasu, bouillon powder and salt.
  • Store in an air-tight container in the fridge.

Making The Fish:

  •  Start by thoroughly cleaning the fish.  
  • Combine 5 cups of water, 2 tablespoons vinegar and 2 tablespoons of salt. Soak the fish in the water mixture for 2-3 hours.
  • Remove fish from the water and pat dry.

Pan Method

  •     Place a non-stick skillet on high heat, add in 2 tablespoons of Atasu oil.
  •     Sear tilapia on both sides until a crust forms.
  •     Add on a generous amount of marinade to cover the fish.  Reduce heat to low, cover the pan and cook for 10 minutes.

Grill Method
    Cover the fish in marinade and set aside to marinade for about one hour.
    Grill until cooked on all sides.
