Jollof-Shrimp Tacos

Jollof culture is beyond Jollof rice, it is truly a classic way of stewing that adds rich intense flavour to what you are making. This simple Jollof Taco recipe come together very quickly using the premade Jollof Sauce by Atarefoods, the classic Jollofnow.
Ingredients
For the Shrimp:
• 1 lb (450g) large shrimp, peeled and de-veined
• 1 tablespoon olive oil
• 2 tablespoons Jollofnow
• Salt and pepper to taste
Optional Sauce:
• 2 tablespoons mayonnaise
• 1 tablespoon lime juice
• 1 teaspoon honey
• 1 teaspoon Jollofnow
• Salt to taste
For the Tacos:
• 8 small flour or corn tortillas
• 1 cup slaw mix (shredded cabbage, carrots)
• 1/4 cup finely chopped red onion
• 1/4 cup chopped fresh cilantro
• 1 avocado, sliced
Directions
- Combine shrimp ingredients (except oil) and set aside to marinate for 30 minutes.
- Heat a large skillet over medium heat. Heat up oil. Add the shrimp and cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.
- If using sauce, toss together all ingredients and set aside.
- To assemble the tacos: Spread a spoonful of sauce on each tortilla. Add on shrimp, shredded cabbage, onion, avocado and fresh cilantro. Add some more sauce.
